We’re taking our love of all things culinary a step further on Feb. 18-20, 2022 with our inaugural Wine & Food Weekend. Packages are still available  for anyone wishing to attend and enjoy a weekend of the finest fare in North Georgia paired with the best of Napa Valley and French wines.

Napa winery and importer Trinchero Family Estates will be on hand Friday and Saturday to pour wine and teach participants about the varietals renowned for their meticulously crafted boutique wines. Trinchero’s Vice President of Trade Relations, Barry Wiss, is the guest speaker for the event. He brings a wealth of knowledge that will help you understand the nuances and finer points of wine flavor notes, winemaking, and how to properly pair wine to different culinary dishes.

Brasstown Valley Resort Wine Weekend Package

The event begins Friday with a reception delving into comparing old-world versus new-world pinot noir. Hors d’ oeuvres will be passed to complement a bouquet of wines featuring Moillard Pinot Noir from Burgundy, Domaine Michel Vattan Sancerre Rouge from Loire Valley, Bravium Signal Ridge from Mendocino Ridge, Ziata Pino Noir from Napa Valley, and Joel Got Pino Noir from Oregon’s Willamette Valley. Each wine will illustrate different aspects of pinot noir and its evolution over the years into one of the most popular varietals.

Sparkling wines will accompany breakfast on Saturday morning. The famous Brasstown Valley Resort breakfast buffet will come with five options of bubbly to get the morning started on the right foot. Avisi Prosecco, Villa Sandi Prosecco, Grandial Brut Blanc de Blanc, Iron Horse Wedding Cuvee, and Nicholas Fuilatte Brut Champagne will all be available so attendees can taste the differences between the Italian Prosecco sparkling wines and French Brut and Champagne. Each exhibit different notes and subtle differences that put the stunning variety of flavors available in bubbly wines on full display.

We will reconvene for happy hour on Saturday to focus on the red wines of Napa Valley along with fruit and cheeses to cleanse the palate. We will have on hand the red blend from Forte, a petite sirah from Stag’s Leap Winery, the merlot from Napa Cellars and a cabernet from Mario’s. Happy hour will build your appetite for the main event, Saturday’s six-course dinner featuring masterful culinary creations from our chefs perfectly paired with wines made and imported by Trinchero. A reception featuring light hors d’ oeuvres of parmesan crackers with a smoked salmon mousse, winter onions and baby basil paired with an Amador Chardonnay Finish Bourbon cocktail precedes dinner.

The decadent dinner begins with the first course, Trinchero Mary’s Sauvignon Blanc paired with a shrimp shooter Tabasco cocktail with baby celery. The second course of winter greens, slivered almonds, aged feta, and a cranberry vinaigrette will be paired with Neyers 304 Chardonnay from Sonoma, California. Heritage pork with Logan Turnpike grits and cherry jus ushers in the third course to pair with Bravium Pino Noir from California’s Anderson Valley. By the fourth course, you’ll be ready for the main events of the evening. Coffee-rubbed lamb with blue cheese risotto and asparagus pair perfectly with Iron and Sand Cabernet Sauvignon from Paso Robles. That sets up the fifth course that combines Mason Cabernet from Oakville in the Napa Valley with braised beef short rib, horseradish potato and broccoli rabe. Cap the culinary masterpiece off with another Amador Cabernet Finish Bourbon cocktail with bread pudding and bourbon anglaise, the perfect digestif to end a feast for the ages.

Sleep shouldn’t be a problem after the best meal of your life, so when you wake up, enjoy another breakfast buffet with a Hanson of Sonoma Bloody Mary bar with all the best house-prepared fixings and Tres Agaves Bloody Mary Mix to end this spectacular weekend.
